Serve with tortilla chips or whole grain crackers.
Makes about 2 cups.
- 1 red or yellow bell pepper, seeded and cut into
- ¼ inch pieces 1 cup cherry tomatoes, cut into quarters
- 2 tablespoons minced red onion
- ½ jalapeño, seeded and minced
- ¼ teaspoon chopped garlic
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- ¼ teaspoon salt
- Tiny pinch of black pepper
- 1 tablespoon minced cilantro
Place all ingredients in a bowl and stir only until well combined.
