Cucumber Yogurt Salad

Enjoy as a side dish with Ethiopian lentils and injera.

Serves 4 to 6 as a side dish

Ingredients

  • 2 cucumbers, peeled and sliced
  • 1 tomato, chopped
  • ¼ teaspoon salt
  • 1 cup plain yogurt

Instructions

  1. Combine the cucumbers and tomatoes in a serving bowl and sprinkle with salt.
  2. Stir in the yogurt and serve.
